Granoro expresses its strong bond with its territory by proposing the 100% monocultivar 'coratina variety' of extra virgin olive oil in the Dedicato Line. The coratina olive, also known as 'racioppo', is a typical cultivar of the Corato hinterland, from which it takes its name. The plant is characterised by its thick foliage and elliptical-shaped fruit, pointed at the ends. It ripens later than the other varieties and occurs between November and January. The colour of the olive ranges from green to red to purplish-black, depending on the degree of ripeness. The olives for the production of this extra virgin olive oil are harvested strictly by hand, using the ancient method of 'bacchiatura' and pressed using stone mills. Harvesting directly from the tree at the right degree of ripeness and cold pressing carried out solely by mechanical means, provides an oil with very low acidity (max 0.5%). The Coratina cultivar is among the varieties that are richest in polyphenols, antioxidant substances that help fight free radicals. Dedicato Extra Virgin Olive Oil is obtained from olives grown on the 'Di Corato' farm in the countryside surrounding Castel del Monte, located in the countryside around Andria, one of the most prestigious olive production areas in Italy.
