Granoro Dedicato D.O.P Extra Virgin Olive Oil is produced in accordance with the rules governing the production of D.O.P. Terra di Bari – Castel del Monte products. It also has the added benefit of being a mono-cultivar oil, that is to say, it is made exclusively from Coratina olives (even though the rules allow the oil to be blended with up to 20% of extra virgin olive oil made from other cultivars, as long as they are produced in the area). The olives are grown in a single olive grove located in the area surrounding Castel del Monte. They are harvested by hand and then cold pressed within 24 hours of harvesting to preserve the sensory properties of the end product. All of this results in a high-quality product, an extra virgin olive oil with an average acidity value below the maximum 0.8% limit prescribed by the law.
